Cucumber Tomato Salad
1 gigantic beefsteak tomato3-4 Kirby cucumbers
1/4 red onion
Salt, pepper, and olive oil.
(Optional: balsamic vinegar)
If you have some crusty French or Italian bread you can soak up all that juicy goodness at the bottom of the bowl.
Sunflower Shoot Salad
Salad4 oz sunflower sprouts cut, rinsed and dried
1 tomato cut in wedges
1 shallot peeled and sliced thin
(Optional: add lettuce or cucumber)
Dressing
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon +/- honey
1/2 teaspoon dijon mustard
salt + pepper to taste
Fresh Corn Salsa
4 cobs of Corn (boiled, microwaved or grilled) kernals sliced off the cob after cooking
1/2 cup of Sweet Purple Onions - finely diced
(if too pungent, soak in water for 10 minutes then drain, this removes the bite)
1/4 cup Parsley finely chopped
Juice from 1 lime or splash of white wine vinegar
Splash of olive oil (or any neutral oil like canola or avocado oil)
Salt and Pepper to taste
For added spice, sprinkle some chili powder or dice up a jalepeño
Bonus - cook or grill a protein and use the Butter Leaf Lettuce as a healthy taco shell and top with the Fresh Corn Salsa
Citrus Kale Salad
Salad 8 cups of Kale
(remove stems, then cut or tear kale into bite sized pieces, sprinkle with salt and gently massage)
Orange segments from 1 orange cut into bite sizes
1/2 cup of slivered almonds (omit or substitute other nuts)
Orange Ginger Dressing 1/4 cup freshly squeezed orange juice
TBSP olive oil
TSP of fresh grated ginger
1/4 tsp of salt and a pinch of pepper
Bonus - top with some fresh Blueberries
